Every recipe below takes 25 minutes or less, uses everyday ingredients, and has been tested at Tom's own kitchen table.

Classic Cheese Omelette

Soft, buttery, and folded around a pocket of melted cheese — the recipe every breakfast cook should master first.

⏱ 10 min🍽 Serves 1⭐ Easy

Ingredients

  • 3 large eggs
  • 1 tbsp butter
  • 40 g grated cheddar or gouda
  • Pinch of salt & black pepper
  • Fresh chives, chopped (optional)

Method

  1. Whisk the eggs with salt and pepper until fully blended.
  2. Melt butter in a nonstick pan over medium heat until it foams.
  3. Pour in the eggs. As they set, gently push the edges toward the centre.
  4. When mostly set but still glossy on top, sprinkle the cheese over one half.
  5. Fold, slide onto a plate, and finish with chives.

Avocado Toast with Soft Egg

Creamy smashed avocado on crunchy sourdough, topped with a jammy egg and a hit of chilli flakes.

Ingredients

  • 1 thick slice sourdough bread
  • 1 ripe avocado
  • 1 egg
  • ½ lime, juiced
  • Chilli flakes, salt & olive oil

Method

  1. Boil the egg for 6½ minutes, then cool in cold water and peel.
  2. Toast the sourdough until deeply golden.
  3. Mash the avocado with lime juice and a pinch of salt.
  4. Spread the avocado thickly on the toast, halve the egg on top.
  5. Finish with olive oil and chilli flakes.

Fluffy Buttermilk Pancakes

Tall, cloud-soft pancakes stacked high and drowned in maple syrup. Weekend rules apply.

⏱ 20 min🍽 Serves 3⭐ Easy

Ingredients

  • 200 g plain flour
  • 2 tsp baking powder
  • 2 tbsp sugar & pinch of salt
  • 1 egg
  • 280 ml buttermilk
  • Butter + maple syrup to serve

Method

  1. Whisk the dry ingredients in a large bowl.
  2. Beat the egg with buttermilk, pour into the dry mix, and stir until just combined — lumps are fine.
  3. Rest the batter for 5 minutes.
  4. Cook ladles of batter on a buttered pan over medium heat; flip when bubbles appear.
  5. Stack, butter, and pour on the syrup.

Cinnamon French Toast

Thick bread soaked in vanilla custard, fried golden, and dusted with icing sugar and berries.

⏱ 15 min🍽 Serves 2⭐ Easy

Ingredients

  • 4 thick slices brioche or white bread
  • 2 eggs
  • 120 ml milk
  • 1 tsp vanilla + ½ tsp cinnamon
  • Butter, icing sugar, mixed berries

Method

  1. Whisk eggs, milk, vanilla, and cinnamon in a shallow dish.
  2. Soak each bread slice for 20 seconds per side.
  3. Fry in butter over medium heat, 2–3 minutes per side, until golden.
  4. Dust with icing sugar and pile on the berries.

Berry Yogurt Parfait

Layers of thick Greek yogurt, crunchy granola, and juicy berries — breakfast in five minutes flat.

⏱ 5 min🍽 Serves 1⭐ No-cook

Ingredients

  • 200 g Greek yogurt
  • 60 g granola
  • Handful of strawberries & blueberries
  • 1 tbsp honey

Method

  1. Spoon a layer of yogurt into a tall glass.
  2. Add a layer of granola, then a layer of berries.
  3. Repeat until the glass is full.
  4. Drizzle honey over the top and serve immediately.

One-Pan Shakshuka

Eggs poached in a bubbling spiced tomato sauce — bring the whole pan to the table with warm bread.

⏱ 25 min🍽 Serves 2⭐ Medium

Ingredients

  • 4 eggs
  • 1 can (400 g) chopped tomatoes
  • 1 onion + 1 red pepper, sliced
  • 2 garlic cloves, minced
  • 1 tsp cumin + 1 tsp paprika
  • Fresh coriander & crusty bread

Method

  1. Soften the onion and pepper in olive oil for 6–7 minutes.
  2. Add garlic and spices; cook 1 minute until fragrant.
  3. Pour in the tomatoes and simmer 8 minutes until thickened.
  4. Make 4 wells in the sauce and crack an egg into each.
  5. Cover and cook 5–6 minutes until the whites are set. Top with coriander and serve with bread.
